The go-to salt for general cooking that you'll find in most NYC / US restaurant kitchens. Diamond Crystal is the brand to look for given its crystal structure and how it feels in your fingers. Salt is your paramount ingredient in any recipe. When I'm abroad / in Copenhagen, fine sea salt is what I reach for.
