The wine with us here is a traditional method sparkling wine. Aged on lees for 18 to 24 months and fully embracing the semi-oxidative complexity that comes with that. Also a Brut Zéro (with no added dosage of sugar), meaning this is an extremely dry, crisp, and focused cuvee. Expressive nose of green apple, lime zest, and white peach, with a chalky mineral undertone.
